Pavlos and I went to get pampered at Solage Spa in Calistoga this past weekend, and let me tell you it is worth the drive. This place is AMAZING it has everything you could ever want. We did a package called Double your leisure, It included a beautiful lunch a mud treatment to die for and a 50 minute massage for $400.00. That is for both of us, so cheap! So I've been dying things around my house and Buff has been helping. I've never tie dyed anything before but it's really fun, and so easy!

Stuffed chicken breast with spinach and feta

New recipe.........Ready go.........

This recipe is pretty easy you just need a few things.....

2 chicken breast
1 cup of bread crumbs
2 cups of spinach
1/2 cup of feta or how ever much you want
2 tablespoons of butter
2 tablespoons of olive oil
First off clean the chicken breast really good. Split them in half length wise so they are half as thick.

Preheat the oven to 375
Heat up some oil in a pan, saute the spinach and feta together until cooked down. About 3-5 min.
Lay the chicken down in a pan, place the spinach and feta mixture in on top and then roll the chicken around it.
Pour the bread crumbs over the chicken and then melt the butter and then pour that over the chicken and bread crumbs.
Cook for 35 min.

We had brown rice and a mixed green salad with almond slivers and cranberries, but you could have anything your heart desires......You truly can.

On the day of a hallmark holiday I take a moment to reflect on why I actually care about this day. I feel compelled to not even think about it, yet I'm strangely drawn to it's cuteness and excess of hearts and pink and cupcakes and roses AND chocolate. If for no other reason it's definitely a good excuse to get dressed up and head on down to RNM. This being Our favorite restaurant we knew we could count on Robert (my favorite Maître d) and the crew to show us a Valentines day love vaccum that would fill our stomachs and warm our hearts. A frittata is a wonderful way to get rid of left overs or veggies . They are so easy to make, here is how I make mine.

scramble 5 eggs with 1/3 cup of soy milk

grate some cheese (cheddar is my favorite) but last time I used feta and it was just as good

Add whatever:
Bacon, potatoes, peppers, chilies, corn, broccoli, asparagus, ham, cilantro, black beans, chicken, tomatoes, you get the picture.

If what your adding is raw, cook it in some olive oil in a skillet until all the way cooked.

Throw all that in a pie pan and cook at 4oo for 25 min. Yumski!!

Alas, my last frittata did not come out so handsome so I stole a picture of one off the internet.

This is my new creation,
potato medley tacos with corn and red pepper salad and garlic avocado sauce.

You will need........

2 yams
2 white potatoes of any kind except russet. (yukon gold, new, sweet, etc..)
6 cloves of garlic
1 tablespoon of butter, or margarine if you are doing it vegan
1 avocado
1 lemon
2 ears of corn
1/2 a bush of cilantro
3/4 a cup of olive oil
1 can of black beans
1 red pepper
salt and pepper to taste
corn tortillas
2 Tablespoons of vegenaise or greek yogurt or mayo (this ingrediant is optional)
Hand mixer or food processor

Start by peeling the husk off the corn.
In a big pot boil water enough for the corn to be submerged.
Wash and peel the potatoes and cut them into small squares.
Heat up a non-stick pan and toss in the butter.
while its melting mince 4 cloves of garlic, then put them in the pan.
Make sure not to burn the butter or the garlic.
cook for 1 min and then put the potatoes in stirring frequently.
The potatoes will take about 20-30 min to cook. They are done when they start to brown and look more mushy.
Once the water is boiling put the corn in and cook for 5 min.
Take them out and let them cool.
While they are cooling cut the red pepper into small squares.
Cut the corn off the cob length wise and put it in a oiled pan, with the red peppers, black beans (drained). Salt and Pepper to taste. Cook for about 10-15 min or until the corn is cooked through.
In a food processor put in cilantro 2 clove of garlic and 1/4 of olive oil 1/2 teaspoon of salt half of a lemon juice.
After the corn, red pepper and beans are done toss with this cilantro dressing.
Now for the avocado sauce:
in the food processor add the avocado, Lemon juice (1/2 of one) 1/2 teaspoon of salt and pepper the vegenaise (if your using it) 1 clove of garlic minced. Yum enjoy!!

I made my own and I'm really happy to say that it cost $20 dollars to make these. They are bootleg but I like them better this way and I can pay rent.

Wimpy winter nights in San Francisco

I know that it never gets too cold in San Francisco, but tonight it's 45 and I WANT SOUP. Lately Pavlos and I have taken up listening to This American Life podcasts and cooking extravagant meals that take at least time enough for 2 episodes. Tonight we cooked creamy butternut squash and sweet potato soup. Here's how its done......

2 tablespoons of olive oil
1 1/2 Sweet potatoes (not yam) peeled and cut into thick squares
1/2 a butternut squash minus skin, and seeds, cut into thick squares
1 yellow onion
3 Large cloves of garlic cut in 4 thick pieces
1 Tablespoon of butter, or margarine if your doing this vegan
1/2 teaspoon of ground ginger
1/2 teaspoon of cayenne pepper
2-3 cups of chicken or veggie broth ( if you use veggie you might need more salt to taste)
1 teaspoon of brown sugar
1 cup of Greek Yogurt, or vegan sour cream

In a pot with a lid, pour in olive oil and heat it on up. On medium heat add and saute the squash, sweet potatoes, and onion for about 9 min, until slightly brown.

Reduce to low, add sugar, butter, and garlic keep stirring for another 10 min.

Add ginger and cayenne pepper cook one min longer

Add 2 cups of broth, turn up heat till this starts to simmer then turn the heat down to a low simmer. Cover another 10 min or until the squash and potatoes are soft.

Pour this into a blender, puree it and it goes back to the pot. Add yogurt or whatever you are using, and mix very well with a whisk. Add salt and pepper to taste. If the soup is too thick for you add more broth. Reheat this on low.

So there you have it, stay in and cook soup or go out and eat it, but say warm.

It actually is pretty easy. You just have to get the measuring right. Cafe curtains are my favorite, and quite honestly I hate flowered curtains, so I got some cute modern fabric and......SHAZAAM whipped them up.

This is a great recipe for sugar cookies that really hold a good shape. They are the soft and gooey type. If you prefer your sugar cookies on the flaky side, just sub half the butter for shortening.
Preheat your oven for 400 degrees

1 cup butter, softened
1 1/2 cups white sugar
2 eggs
3 cups Flour
2 teaspoons baking soda
2 teaspoons pure vanilla

First goes the butter and sugar (you will need an extremely strong arm) or an electric mixer for this. Blend them together until nice and smooth. In a separate bowl sift the flour and baking powder together. Start little by Little adding the flour mixture into the butter mixture and note the amazing chemistry. Make sure they're marry mixture is lump free, then add one egg and mix, then the other and mix. Lastly the wonderful pure vanilla extract, makes all the difference.

When that is done split the dough in half, wrap them in plastic wrap and chillax them in the fridge for about an hour. This will give the dough time to think and take form for the next task at hand. In this time you should be making any frosting you might want. I like liggidy love cream cheese frosting so I use it whenever possible. Check it..........

2 packages of cream cheese
1/2 a cup of butter, soft
2 cups of powdered sugar, sift it or it will be lumpalicious
teaspoon of pure vanilla extract
squeeze of lemon juice

mix and spread!!

Roll the dough one at a time out on a floured surface. This is when you can use cookie cutters to enhance your sugar cookie extravaganza! Place them on cookie sheets with parchment paper, and cook them for EXACTLY 8 min. Set a timer, don't try to eyeball it. Remember always preheat your oven 30 min before you do any baking. Enjoy.
